Back in college, I would make zoats for breakfast, lunch, and dinner because I loved them so much. What are zoats, you ask? A combination of shredded zucchini, almond milk, and egg whites that, when cooked, turns into an extremely satisfying and surprisingly delicious substitute for oatmeal. When I eat them, I love that I'm getting a full zucchini's worth of veggie servings in just one meal without tasting the zucchini at all. I'm not gonna lie, it can be hard to get me to eat lots of veggies at home- I HATE raw vegetables, and sometimes, I just don't feel like cooking them #lazy. But zoats are my secret to eating veggies without feeling like I'm eating veggies. They're just so yummy!
I love zoats even more because I can customize them to my always-changing tastebuds. Every single picture in this post is a pic of zoats, but notice how they all look different? It's because they are, and that's such an amazing thing! Some days I wake up craving chocolate, so I make my chocolate peanut butter flavor. Sometimes, I crave cinnamon rolls, so I make the cinnamon roll flavor, which I'm going to be sharing with y'all today (get pumped!). I've also made salted caramel and I want to try out carrot cake and lemon bar soon... but that's for another post. Right now it's all about that cinnamon roll, and also the realization that I only ever crave sweets. Oops.
The idea for this recipe comes from my best friend Danielle, of Uncaged Cuisine, who happens to hate chocolate. Honestly, I'm surprised I'm still friends with her, because chocolate is my #1 favorite food, but I guess she's worth it or something ;) Anyways, we made a big batch of cinnamon roll zoats before a tailgate once, and it was easily the best I've ever felt while drinking. Full but not bloated, which is essentially a miracle. I very rarely drink now (by rarely, I mean that I order a glass of wine every other week and drink two sips and realize I'd rather have dessert...) but I still love how my zoats keep me full all morning!
So without further ado, here is my all-time fave breakfast recipe and the first official recipe on the blog! Enjoy & let me know if you try it out!!!
Cinnamon Roll Zoats
1 whole zucchini, grated
1 cup unsweetened vanilla almond milk (like Almond Breeze)
1/2 cup egg whites
1 tbsp cinnamon
2 tbsp coconut flour
1 scoop vanilla protein powder (like Perfect Fit)
Liquid stevia or Swerve, to sweeten
Big spoonful of Better 'N Peanut Butter (MY FAVE!!!)***
1) Grate one zucchini into a small saucepan with a fine grater. Squeeze out some excess moisture by pressing a paper towel into the zucchini.
2) Combine zucchini, almond milk, oats (if using), and egg whites in saucepan over medium-high heat.
3) Bring the mixture to a boil and cook until it becomes thick and less watery, about 10 minutes. It will still be kind of liquid-y at this point, but that's okay!
4) Bring heat down to low and add coconut flour, protein powder, cinnamon, stevia, and nut butter. Mix until thick and texture resembles oatmeal.
5) Once you put your zoats in a bowl, add toppings of your choosing! I love cacao nibs, coconut chips, and lots of berries :)
***I love Better 'n Peanut Butter because it's low in calories but still tastes amazing! However, I also love using almond butter or regular peanut butter when I'm in the mood for some extra good-for-you fats. Do whatever you're in the mood for, but definitely try out Better 'n PB if you've never had it!***
